Day 149 - Tuesday Weigh-In Week #21

Song of the Day:  Natasha Bedingfield - Wild Horses

So, I decided to change my weigh-in days to Tuesdays.  That way, if I over indulge on salty foods on the weekend, I have a day to fix the water weight.  Now, since yesterday was kind of like the weekend, instead of a recovery day, it was just another day of indulgence.... oops :)

1/3/11 - 232.6 lbs
1/31/11 - 217.4 lbs
2/28/11 - 206.0 lbs
3/26/11 - 208.8 lbs
4/25/11 - 206.0 lbs
5/2/11 - 205.5 lbs
5/9/11 - oops...
5/16/11 - 204.0 lbs

5/23/11 - 202.4 lbs

5/31/11 - 203.2 lbs
Weight loss for Week Twenty: + .8 lbs
Weight loss Total: 29.4 lbs

Weight loss since my heaviest (5/22/10 - 264 lbs): 60.8 lbs

So +.8, I mean, not what I want, but it could be worse.  And like I mentioned above, I think it has a lot to do with my salt intake this weekend.

In other news, I am not behind in school, but right on schedule, and I prefer to be ahead.  I tried to get some stuff done this weekend, but just never got around to it.  Okay, lets be honest, I didn't really try.  But today I am getting everything caught up, and then hopefully ahead.  Which means I have a lot to do!

Elliot took his nap without his pacifier, so I'm hoping that we are one step closer to having a nuk free kid!

Day 146-148 - Memorial Day Weekend

Song of the Day:  Taylor Swift - Speak Now

What a great weekend!  We spent Saturday helping my parents get ready for Logan's graduation on Sunday.  We set everything up and cooked all the food.  It was a busy day, but it's always nice to spend time with family. Sunday we went to church, then went to Logan's graduation, then did the final set up for Logan's party.  There were so many people there!  Of course, who can blame them because my mom's walking taco's are the best!  I probably ate my weight in tacos.  And Linda's Bakery almond cake.  Enough said.  So, so good :)

Monday morning I went to breakfast... well it was 10:00, so brunch with some of my closest friends.  I love getting together with these ladies because I feel like, even though we have different things going on in our lives, we pick up right where we left off.  For the afternoon we celebrated Logan's birthday (more amazing food and cake!) and finished taking down the tent, tables, and chairs from the party.  We got Elliot a little splish-splash activity pool since it was so hot, and he had fun in it, even though the water was a little cold.

We headed home around 7:15 and before we even hit Tomah (about 40 minutes in) Elliot had thrown his pacifier and I couldn't find it from the front seat.  He was screaming so we pulled over, found it, put it back in his mouth, then continued driving.  By the time we hit Wisconsin Dells (about another 35 minutes from Tomah) Elliot had thrown his pacifier again and was yelling.  We then decided that this would be the first night without a pacifier.  We were fine with him having one, but wanted to get rid of it sometime this summer anyway.  He's started using it as a tool to get what he wants (he throws it on the ground and he assumes you'll put him on the ground too) instead of as an aid to fall asleep or calm down.  So, it's gone.  He finally fell asleep in the car, and fell asleep at home without his pacifier.  We'll see how tomorrow goes....

Day 145 - keep the plates spinning...

Song of the day:  The Lonely Island - Jack Sparrow (feat. Michael Bolton)

It was so nice to not have to go anywhere yesterday!  I got a ton of school work done so I only have one thing left that's due today!  I think I finally got into a good rhythm on when to do my school stuff so it gets done before it becomes last minute.

Last night I made tacos for dinner.  I hadn't planned out dinner since we had to pick up my car as soon as Kyle got home, so I stopped at Target on the way back to get everything I needed.  Jennie-O now offers extra-lean ground turkey!  It's a 99/1 mix!  That's amazing!  It tastes so good and it's nice knowing that it's practically fat-free!  I also got whole-grain taco shells, so our tacos seem a little healthier.

Tonight we're heading to the La Crosse area for the weekend.  My cousin's graduation party is tonight and Logan's graduation and party are both on Sunday!  I can't believe that Logan's done with high school already!  We're all getting older!  And if I feel weird about it, I'm sure my parents are dealing with it as well (Logan is the youngest kid).

I know that I need to get back into a work out schedule, but right now I'm not sure where I'd fit in a structured work out.  I do get a lot of activity playing with Elliot though, so I guess I'll just have to count that for now.  :)

Day 143 & 144

Song of the day:  Nelly - Dilemma ft. Kelly Rowland

Yesterday Elliot and I went to Milwaukee for his 1 year post- surgery check up.  His x-rays are still looking great and his scars are barely visible.  One of them you can only find if you know it's there!  His surgeon was really glad to see he was doing so well, and he is now officially off medication - he's been off it for about two months, but now his doctor's know it too, lol.  Today is exactly one year since he went in for his surgery.  I remember how scared we were.  It's so amazing what God can do in a year, or with your fears in a day.  I'm so thankfully that Elliot is now a normal little boy, and if it wasn't for the small scars there would be no evidence that there was ever anything wrong.

Today we're taking a day off from doctor appointments!  Thankfully!  And our car is getting it's 90,000 maintenance, so we couldn't go anywhere if we wanted to!  Elliot was walking a ton yesterday, so I imagine he'll work on the same thing today.  I have a ton of homework that's due tomorrow, so that's going to be my main goal for the day!

I've been eating pretty well, given that we were on the road all day yesterday.  I did have McDonald's for breakfast and lunch, but I didn't overeat and stayed within my calorie range!  I really do need to increase my water though, because I've had this terrible migraine for the past 4 days and I think it's because I haven't really been drinking water... or I hope that's what it is, because I really want it to go away.

Day 142 - I'm no longer dying

Song of the Day:  Bob Marley - Buffalo Soldier  We were listening to this song in the car this morning and Elliot likes to sing along with the "yoy-yoy yoy" part, lol :)

Good news!  I no longer feel like I'm dying!  My fever (which topped out at 102.6) is finally gone, and I no longer feel like my stomach is trying to leave my body.  I'm super sore though, but still I feel so much better than yesterday.

I also started school yesterday, so I'm a bit behind because I wasn't able to do anything.  I did turn in an assignment, which I had thankfully done Sunday night, at about 10:30, and got to answer one of the discussion questions, but I couldn't sit at the computer for that long.  There are extra credit opportunities, but I'm really not too worried about it.  I needed to get better, and that's really all I was concerned about.  And thankfully Elliot didn't get sick!

Kyle went back to work today, and Elliot and I went to the dentist.  I love going to the dentist because they always tell me how great my teeth look :)  She also took a look at Elliot's teeth and said they looked really good too!  He also showed her how good he is at brushing his teeth :)

Today I'm going to work on school stuff and try to start eating something other than water and applesauce :)

Day 141 - Monday Weigh-In Week #20

Song of the day:  As I Lay Dying - Through Struggle  .... I'm really not into metal, but the band name seemed fitting for how I'm feeling today...

I am sick.  Really really sick.  It all started about 2:00am Monday morning.  So sick that I'm not even going to go into all of it, but I will let you all know that I couldn't even get up off the bathroom floor to go back to bed and slept on the floor for a few hours.  Thankfully Kyle was able to stay home from work and take care of Elliot.  I honestly don't know what I would have done if he couldn't because I couldn't even stand until about 2:00pm.  I'm writing this on Tuesday because I didn't get up at all yesterday, but I did get a chance to weigh myself!

1/3/11 - 232.6 lbs
1/31/11 - 217.4 lbs
2/28/11 - 206.0 lbs
3/26/11 - 208.8 lbs
4/25/11 - 206.0 lbs
5/2/11 - 205.5 lbs
5/9/11 - oops...
5/16/11 - 204.0 lbs

5/23/11 - 202.4 lbs

Weight loss for Week Twenty: 1.6 lbs
Weight loss Total: 30.2 lbs

Weight loss since my heaviest (5/22/10 - 264 lbs): 61.6 lbs

In one year I've lost 61.6 lbs!  That's awesome!  Now that I don't feel like I'm dying anymore, I can actually get excited about the weight that I've lost!  If I can continue to lose, I should be at my goal weight by the end of the year!

Day 139 & 140 - Happy Birthday Elliot!!!

Song of the Day:  Happy Birthday Song

We had a great time celebrating Elliot's birthday!  And from what I can tell, everyone else had a great time as well :)  After the party he crashed for 2 1/2 hours!  It was great seeing all of our friends and family that were able to make it!  And the cakes turned out really well!  I was going to stack them, but it was so humid and I didn't want to chance a cake slide!  The top layer (Elliot's cake) was banana flavored with strawberry frosting.  The next layer (green) was margarita (non-alcoholic) flavored with lime frosting - this one is my favorite by far!  The next layer (purple) was chocolate with dark chocolate mint fudge filling and mint icing.  The bottom layer (blue) was almond cake with vanilla almond frosting - my second favorite!  And they are in NO WAY good for you, lol!  In all four cakes (including frosting) I used about 10 sticks of butter and half a pound of sugar.  But it's so good to indulge once in a while!  :)

Today (Sunday) is Elliot's actual birthday!  To celebrate we took a family trip to the Henry Vilas Zoo!  Elliot had a really fun time looking at the animals (especially the otters!) but I think he had more fun pushing his stroller, lol.

I can't believe that it's been a year since Elliot was born!  He's changed so much!  I'm looking forward to what this next year will bring :)

Day 138

Song of the day:  Bee Gees - More Than A Woman  ...this morning I was driving next to a mini van that was blasting this song, lol

My eye appointment went really well!  I hadn't been to the eye doctor since 2004 and nothing's really changed, so that's a good thing :)  And of course the only super sunny day of the week is the day that my eyes get dilated... hello super awesome looking glasses, lol.

We got a ton of shopping done last night, and now I'm ready to bake and cook my life away today!  My parents and Logan are coming down tonight, so my dad and kyle can "taste test" the potato salad, lol.  Yesterday I ate really well again, in fact I haven't really been feeling hungry lately.  I think it's the nicer weather.  I tend to eat better in the summer.  I think it's because I don't want to eat anything super heavy, and all the fruits and veggies are so much better!  For dinner I had a roast beef sandwich and Kyle had leftover pizza.

Okay, it's time to start baking!  I'm not sure when or if I'll write tomorrow, but I'll definitely post some pictures on Sunday!

Day 137 - yay yay thursday!

Song of the day:  Relient K - Come Right Out And Say It

Okay.  Yesterday was May 18th, and I was cold with the windows open.  COLD!!  That is just... just... wrong. I don't even know what else to say about it.  Today is supposed to get to 71, and it supposed to be humid.  For Saturday it's supposed to be 74, but raining :(  The rain sucks, but I'm glad that we rented out the clubhouse, otherwise it would have been a tight fit in our apartment!

For dinner I made whole-wheat pizza all from scratch!  The most processed thing on the whole pizza would have to be the pepperoni.  Here's the links for the pizza sauce and whole-wheat pizza dough.  We topped the pizza with reduced-fat part skim mozzarella cheese, mushrooms, pineapple, and pepperoni.  It was so so good!

I didn't get around to working out again, but I did clean our room and our bathroom.  Today I'm going to clean the other bathroom, kitchen, and dining room.  Tomorrow is going to be my big baking day, so I don't plan on getting any workouts in for the next few days, and I'm okay with that!  Today I need to make a master list of stuff we need for the party because we are going to go grocery shopping tonight!  I'm just so excited for this weekend, and I can't believe that it's already here!  Yesterday was a year from Elliot's due date, so a year ago today I was laying on the couch, huge and uncomfortable, lol :)  Glad to say that I will not be doing that today!

Day 136

Song of the day:  Miranda Lambert - The House That Built Me

We had a very nice lazy day yesterday.  :)  For dinner we ended up having spaghetti and garlic bread.  I have had a little roller-coaster of migraines lately (had one Friday as well), and nothing seems to be helping.  So last night I really didn't want to cook and spaghetti is super easy (when you get jarred sauce).  It was really good and a little bit 'comfort food' feeling.  I went to bed early and feel so much better this morning.

The challenge for this week is to get 30 minutes of cardio in every day.  Due to my migraine I didn't get 30 minutes in yesterday, but I'm hoping to get in 60 minutes today to make up for it.  Along with working out, I am going to start deep cleaning our apartment.  Elliot's party is in the clubhouse, but we'll be showing people our house as well, so I want it to be clean. :)  It's supposed to rain on and off today, so it's a perfect cleaning day!  And after dinner (which I'm currently unsure of what that will be...) we're going to go shopping for some of the stuff for Elliot's birthday.  There's some things that I don't want to get until Friday or Saturday (ie fruit/veggies) but there's quite a bit I can get now.

I'm really excited to see a lot of our friends and family that we don't get to see very often!  It's so awesome that people are willing to drive down for Elliot's birthday and really makes me feel loved :)

Day 135

Song of the day:  Adele - Rolling In The Deep

We had such a great time at the zoo yesterday!  Elliot had a fun time looking at the animals, but had more fun at the kids play area, lol.  He also did a lot of walking while holding onto my hand!  I'm almost positive that he can walk on his own, but just doesn't want to, lol.

For dinner I made a chicken/noodle dish with green onion, garlic, lime, soy sauce, fresh sweet basil, and fresh cilantro.  It was really good and had a ton of flavor!  And the basil and cilantro came from my plants on the patio!  It was so nice to have Kyle home for dinner!  After dinner we went on a walk to Target to get a watering can.  It was so nice outside and I'm hoping that it stays nice for a while!  I really want to do something today, but I really need to get Elliot's nap schedule back on track, so our activities may just be going out in the yard to play.

I'm not sure what I'm going to make for dinner, but I do know that I really really want tacos!  Like, bad for you tacos.  I really don't want to splurge on tacos since I had such a great weigh-in this week, so maybe I'll do a taco salad (or something like that) instead.

Day 134 - Monday Weigh-In Week #19

Song of the Day:  Jason Gray - I Am New

1/3/11 - 232.6 lbs
1/31/11 - 217.4 lbs
2/28/11 - 206.0 lbs
3/26/11 - 208.8 lbs
4/25/11 - 206.0 lbs
5/2/11 - 205.5 lbs

5/9/11 - oops...
5/16/11 - 204.0 lbs

Weight loss for Week Nineteen: 1.5 lbs
Weight loss Total: 28.6 lbs

Weight loss since my heaviest (5/22/10 - 264 lbs): 60.0 lbs

YEEESSSSSSSSS!!!!!  I am finally seeing the scale make a significant move again!  I feel like it would have made a larger move if I had eaten better this weekend, but I'm okay with the 1.5 lbs!  Also, I didn't really work out at all this past week besides a few days of the challenge, so I'm okay with my weight loss number.  My plan for this week is to continue to eat well and get in 30 min of cardio 3x this week.  That should be pretty easy since Kyle is home this week!

More good news is that I've had a really hard time keeping my pants up - the new pants that I bought like 4 weeks ago!  So whereas the scale isn't making a huge move, the inches are definitely coming off (my hips at least, lol).  I wore shorts and a pair of pants in the past two weeks that I haven't worn in well over two years!  And they fit perfectly!

Today, Elliot and I are having a play date with Beth and her nieces!  I'm really excited and Elliot will be when we get there, since he loves to flirt with the ladies, lol.  I'm trying not to get too wound about making sure everything is ready for Elliot's birthday, because, really, there is nothing I can do right now.  I could clean up, but I'll just have to do it again, and I can't cook anything because it will be icky by Saturday.  So I just need to enjoy my day.  :)

Sunday, May 15, 2011

Day 133 - such a nice weekend :)

Video of the Day:  Elliot gets up around 7 and church isn't until 10, so he found a way to help get himself ready this morning by brushing his hair.... with a bottle brush, lol.

We had a really fun time yesterday despite the so-so weather!  We didn't make it to the farmer's market because UW's graduation and move-out day were also going on, so there were a ton of people and parking was ridiculous, so we skipped it.  Instead we went to the Middleton Library book sale and some garage sales!  We found a ton of great deals on books and clothing for Elliot!  Elliot also saw a lot of "pup-pup" 's.  We weren't really sure what he was talking about at first, or that he was even talking, then we realized that he was saying "pup-pup" in reference to the dogs that were at the garage sales.  So, he has another word in his vocab!  We'll see how long this one lasts, lol.  We also stopped in at Daisy Cafe and Cupcakery for some afternoon cupcakes and coffee.  Elliot, of course, loved it. :)

Today we went to church and have just had a lazy day since. :)  We had plans to do something, but we've done so much for the past two days, and Elliot's nap schedule has been so weird, that we just decided to lay low this afternoon.  We watched some TV and a movie, and now Kyle's taking a nap and Elliot's in bed.  It's supposed to possibly frost tonight, and I'm not excited about that!  I want the nice weather back!  Where is this spring that I remember from years past, lol.

Elliot's birthday is in a week, and I have a lot to do this week to make sure that we have everything ready.  I'm really glad that Kyle's home this week so I don't have to try and get it all done by myself, or with Elliot's "help." :)  I'm thinking that tonight is going to have an early bed time, because I'm already ready to fall asleep, lol.

I haven't really worked out at all this weekend.  Our challenge for my group has been to do 75 of a certain workout (push-ups, crunches, forward lunges) everyday, and I've done it about 2.5 days.  But my eating has been really good - minus today!  Not that today was horrible, but I did finish all my Candinas Chocolates today.... in one sitting.... eight chocolates... yeaaahh.  So, I guess I'll just have to see what tomorrow brings!  And I'll remember to weigh-in, I promise, lol.  :)

Day 131 & 132

Song of the Day:  Israel "IZ" KamakawiwoÊ»ole - Somewhere Over The Rainbow

So apparently there were some issues with blogger.com and I wasn't able to sign in at all yesterday.  Weird.  Anyways, Kyle took off work yesterday and we went to Whitewater to get my books and student ID.  Ethan joined us for a while since my dad was on his way to pick him up.  I noticed a lot of facebook status updates that a lot of people from Cole's class are graduating college this weekend.  They were all freshman when I was a senior in high school, and I'm just going back to school now.  Ugh, I guess better late than never, right?

Since we were on the road I didn't eat very well.  I actually would have been under my calorie range, but I got a sweet tea from McDonald's instead of my usual Diet Coke.  So I was over by about 150.  We had Rocky's for dinner, but I ordered a garden salad and only had one piece of pizza.

This morning I've already made a batch of Tuscan Lemon Muffins and they look really really good!  Today we are heading to the Farmer's Market then to the Middleton Library Book Sale and maybe some garage sales.  It's supposed to be in the 60's today, and it looks like it might rain a bit, so hopefully we'll be able to get everything done!

Day 130 - a little orange

Song of the day:  Bruno Mars - The Lazy Song

I ate amazingly yesterday!  For lunch I had a turkey sandwich with some grapes, for a snack I had a chai muffin, and for dinner I had whole-wheat spinach and ricotta ravioli with a side of steamed spinach.  It was all really good food!  And I feel like I'm finally back on the band wagon!

It was so humid, and I had to turn on the A/C because of Elliot.  I didn't feel like working out, so instead I decided to try out a self-tanner.  The Jergen's lotion works great, but when it's so humid, I don't want to put on lotion.  I have pretty moist skin due to all the water I drink, and genetics, so adding lotion just makes my skin feel icky when it's so humid.  I talked to Alyson Monday night and she was trying out a self-tanner, so I though, I should give one a try.  I picked up Banana Boat Summer Color Self-Tanning Mist from Target.  Instead of diving right in to the whole thing I sprayed just my right leg.  I wanted to have a reference so I could see a before and after in different lighting.  Yeah..... parts of my leg look tan, other parts look orange, but there's definitely an overall orange glow going on.  I'm very glad that I didn't spray my whole body!  Ugh, oh well, it was on sale, so I'm only out $5, and being able to wear short for a few days, lol.  I'll be doing some mad exfoliation today, lol.

Today is supposed to be in the 80's with thunderstorms again.  Depending on the weather, after lunch we may head out to some of the other Goodwills and Hobby Lobby.  I really want some inexpensive art/ideas for do it yourself art project that can go on our walls.  They look kind of bare.  Also, I decided to collect Janet Evanovich's 'numbers/stephanie plum series' books.  They're my favorite and pretty quick reads so I would like to have them on hand.  It's more expensive to buy them for the my Nook or from a retail store, and I always see them at Goodwill's.  I got three of them yesterday and it only cost me $6, which is less than one paperback.  Not to bad, but I don't think I'll be wearing shorts to Goodwill, lol.

Day 129 - hot in herre

Song of the day:  Nelly - Hot In Herre  ...no the double 'R' is not a typo... sigh.

Yesterday was so beautiful!  We played outside in the yard and on the porch for most of the day.  I was a little worried that I might have gotten sunburned, but I didn't!  Today is in the 80's as well with 67% humidity.  It's not the heat that's rough, it's the humidity.  I just turned on the air-conditioning because Elliot is so fussy from the humidity.  He doesn't know what to do with it.

This morning I had a spinach, green onion, and cilantro egg white omlette with a piece of whole wheat toast and iced coffee.  So so good!  Then we went to Goodwill to get some books and expand our Disney movie collection (still looking for The Lion King!).  After Goodwill we went to Target (of course) and got Elliot some sandals.  I'm pretty sure he grew a ton last night and I had to get him size 4 sandals even though he was just in size 3 shoes last week!

It's supposed to storm this afternoon so we'll be staying inside.  Elliot's been really into coloring lately, so we'll probably make some more fridge art masterpieces.  :)  I know I should workout, but right now, I'm just too hot.

Day 125-128 - ummmm, oops....

Song of the day:  The Band Perry - If I Die Young

I had a great weekend!  I ate like crap, but had a lot of fun.  Friday we had Pizza Hut pizza.  Saturday we all went to the farmer's market and got some spinach, green onions, ravioli, a tomato plant, and this amazing chili vinaigrette!  We will be heading back this weekend to get some more vinaigrette because we've used almost the entire bottle so far!  After the farmer's market we went to Pegasus Games so Ethan could get some more dice and Elliot took three steps in a row while we were there!  We then ordered Buffalo Wild Wings for lunch while Elliot took a nap.  We napped, played a few rounds of Uno, took a tour of Kyle work, then ordered Chinese.  I snacked on tons of chips and diet soda as we played some dnd.  Sunday morning Elliot was really screwed up since he only had one nap on Saturday so he woke up at 6 and was ready for a nap again at 8, so we didn't make it to church :(  We spent the afternoon looking for planters for our patio and herbs and veggies to go with them.  And we went out to eat at TGIFriday's.  I ended up getting a banana pepper, jalepeno, and serrano pepper plant, and mint, sweet basil, and cilantro.  The plants are still alive!  Lol.  I also got a really pretty hanging basket for our patio :)  AND, most importantly, a box of Candinas Chocolates.  They are so so so good!  For dinner we went over to Copps and got salad and sushi, which was the only healthy choice I had made for about 48 hours.

Monday morning hits, and honestly, I didn't want to step on the scale.  I knew it wasn't going to be a pretty picture, so I just skipped the weigh-in so I wouldn't have to deal with the guilt.  And a lot of the gain is from water weight from all of the sodium I had this weekend.  Elliot and I went out to lunch with my friend Beth and I ended up getting this cheese filled pasta seafood dish.  Fail.  So whatever.  It is what it is, and I can just look forward now.

Today has a high of 80 degrees, and it was already 60 when we got up this morning!  All of the windows are open, and after lunch we're going to go on a walk to the park!  We're going to be outside as much as possible today!  I'm also severely increasing my water intake to help detox my body from this weekends choices.  I got some lean cuisines to help keep me from ordering food if I find myself starving and not wanting to cook.  Hopefully I can get back on track this week.

Day 124

Song of the day:  Beyonce - Get Me Bodied

Yesterday went pretty well.  I did go on a little big of an eating binge towards the end of the day, and I'm blaming the dove bunny, lol.  But I did work out dvd, so I think it all probably evened out.  For dinner I made Cilantro-Lime Tilapia on a bed of cooked spinach and it was so good!  I'm thinking of having it for lunch today too!  I think Elliot would have liked it, but he took weird naps yesterday and when he woke up he was ready for dinner and didn't really want to wait for fish, lol.

I'm going to do a work out dvd today as well since I'm not sure if I'm going to work out this weekend.  My brother's Ethan and Logan are coming to visit tonight.  Logan has a college placement test tomorrow morning, and Ethan's coming so we can all play some DnD tonight/tomorrow!  Lol :)  We'll also probably order pizza tonight and eat something now completely healthy tomorrow.  So Sunday would typically be a recovery day, but it's mother's day, and it's my first mother's day, so I'm not really sure what we do for it, lol.

Oh- if you have a keurig coffee machine, get the Donut House Collection Cinnamon Roll coffee!!  So so good!  It's not overly sweet and still tastes like coffee, which I appreciate.

Thursday, May 5, 2011

Day 123 - chicken upgrade

Song of the day:  Lou Bega - Mambo #5   ....Elliot loves this song, lol.

Ok, I take it back.  The Pistachio-Chai Muffins from CookingLight.com are way better if you warm them up in the microwave for about 20 seconds, then put a little bit of butter on them!  So so good!  Kyle thought they were really good without heat or butter, so I guess it's up to your own personal taste.

Yesterday I made some changes to my blog layout.  I added google adsense where companies put ads on my blog.  I'd just like to say that I don't know what ads they are deciding to put on there, but I'm pretty sure that they are all going to be appropriate.  Lets hope so!

Anyways, I ate really well and had plenty of water!  I didn't work out because I was busy FINALLY unpacking and finding a home for everything in our place!  It feels so nice to have everything put away where I want it to go!  And I even rearranged Elliot's room and reorganized Kyle's closet.  I figure that I'm the one doing the laundry, so I'm going to arrange his closet to my liking, lol.  :)

For dinner I made Ginger Pineapple Chicken from Spark People recipes.  It's made in a slow cooker, so it's super easy, and it was amazing! - And as an added plus, Elliot loved it!  He would finish the chicken that I had cut for him before I could even cut another serving!  He's gotten down the hang of saying "more," which comes out as "mo" and it's so adorable :)  I'll definitely be making that meal again!

This was also one of the first meals that I've made with Gold'n Plump chicken vs Target brand frozen bagged chicken.  What a difference!  Now, if we could we would have the freshest, organic, know where it's raised or grown food, but honestly, we can't afford it.  We do what we can to eat healthy, but we just can't afford to spend $5.99 on a pint of organic strawberries.  Anyways, the last bad of frozen chicken we bought was horrible.  It was a lot of fat and there were chicken chunks that didn't even resemble any part of a chicken I've ever seen.  I said that we needed to be done with the bagged chicken and just suck it up and buy the other stuff.  It's amazing how different it is!  There's almost no fat on them and they actually look edible, and they taste amazing.  Honestly, if we couldn't afford it, we'd still be eating bagged chicken, but I'm glad that we can now.  We're all about living within our means, and getting deals wherever we can, and we tend to buy store brand versions of just about everything (except ketchup and macaroni, lol), but sometimes we just need to spend more.  For example, for the first three months of our marriage we were super poor because we were paying rent at 3 apartments, and we ate off brand hamburger helper and $1 banquet meals for every dinner and lunch.  I now refuse to eat either, lol.

Kyle got home about 7:15 and he and Elliot played for about 20 minutes before Elliot was ready for bed.  I've been trying to teach him to walk by sitting near him and telling him to "come" when he's standing next to something.  He thinks we're playing a game where he stands next to something then takes a step while falling into my arms, and laughs, and laughs, and laughs!  Lol.  I didn't get an official work out, but playing with Elliot was definitely a workout!  We ran around the house all day!  And by running I mean chasing after each other on all fours.  And we have wood floors.  ...My knees are a little bruised, but it was totally worth it!  We went to Walgreens and Copps, so I also got a little bit of a walk/workout in.

I ate 5 servings of fruits and veggies, with even more fruits than yesterday!  I realized that I typically do eat a good amount of fruits and veggies without really trying.  I like good food, and most good food includes fruits and veggies.

Today, I really want to get a workout in while Elliot is napping.  Everything is cleaned and put away, so I really have no excuse as to why I can't work out.  I guess I could probably do it now instead of continuing to type, lol.

Day 122 - Easter Explosion Trailer

Video of the day:  Easter Explosion Trailer  - my brother is editing down the full video, but here's a teaser of our Easter activities!

I definitely got in my 5 fruits and veggies!  And like I figured, it was about 4 servings of veggies and 1 serving of fruit.  I'm just not really a fruit person.  After lunch we went grocery shopping.  I had done some major coupon-ing, and I wanted to get my use out of them!  We went to Bed Bath & Beyond (they have a ton of keurig coffee), Cub Foods (Buy one get one free on chicken and strawberries!), then to Target to do the bulk of our grocery shopping.  I also had some coupons for Walgreens, but Elliot was beyond done shopping and ready for a nap, so we went home.  Today we'll walk over to Walgreens to finish shopping.  Total, I saved $49.85!  Not bad at all!

For dinner I made Main Event Marinara Sauce (from Spark People Recipes) with some noodles, thinking I'd get spaghetti.  Well, I used diced tomatoes instead of crushed tomatoes, so it was more of a bruschetta type thing.  Either way, it had a little more kick than Elliot can handle (and I added garlic of course) and it was really weird with the noodles.  So I made some garlic bread and used it as a topping, and that was really really good!  So I guess it wasn't a total failure.  Then I made Pistachio-Chai Muffins, except I subtracted the pistachios (because they are EXPENSIVE) and added shredded coconuts.  Eh, they're okay.  They're a cooking light recipe, and they taste like a stereotypical "diet food."  I really like the flavor, but they are really dry.  I think next time I'll add a little oil to the recipe.  I think that applesauce might work as well.

I didn't get a chance to work out, but I am okay with that since my eating was in check.  For my after dinner snack I had cantaloupe - my one fruit of the day!  Lol.  I stayed up later than I had planned on and just as I was about to fall asleep, I heard Elliot crying.  And this wasn't just a little whimper, this was real tears and everything.  I think he had a nightmare.  So I went into his room and we cuddled for about 30 minutes.  I'm amazed at how fast a year had (almost) gone by.  When Elliot is really sad/tired he cuddles the same way that he did when he was in the hospital, with his head tucked right into my throat (which is slightly uncomfortable for me, but I still love it) and giving me a little hug with his arms.  The difference is when he was in the hospital his legs were tucked under him around my stomach, and now his legs are tucked under him on my lap.  He's getting so big and growing up so much.  I can't believe how fast time has gone.  Okay, that's enough of a lament, lol.

Kyle is in Milwaukee this week, but he's coming home tonight so we can see him!  I'm really excited and I can't wait for him to be home, if even for a night.  :)

Day 121 - Eat Your Veggies

Song of the day:  Veggie Tales Theme Song

Well, I didn't work out yesterday.  Instead I cleaned and FINALLY got everything put away that was on the table and the counter in the kitchen!  But my swiffer vac died (it wasn't fully charged) before I got to the living room, so I'll have to tackle those dust bunnies today.  I also did all the laundry, so I still consider the day to be a plus.

I just finished Elliot's invites, made a facebook event, and sent emails to family, and now I'm working on a grocery list.  The problem is that I don't really know what I want to make for dinner/lunch this week and I'm finding too many recipes!  I guess that's an okay problem to have.  I did some major coupon-ing with the Sunday paper, so I know what I want to buy, I just need to make it fit into meals.

I really do want to workout today, and I know I should/need to, but I'm not sure if it's going to happen.  I'm planning on running the June Dairy Days 5k, and I hope it keeps me motivated to keep running.  This weeks challenge in my spark people team is to get 5 servings of fruits and veggies each day.  I think that should be pretty easy to do.... right?  Lol, I guess we'll see!

Day 120 - Monday Weigh-In Week #17

Song of the day:  Frances England - Blueberry Pancakes  (the song from the Bisquick commercial)

1/3/11 - 232.6 lbs
1/31/11 - 217.4 lbs
2/28/11 - 206.0 lbs
3/26/11 - 208.8 lbs
4/25/11 - 206.0 lbs

5/2/11 - 205.5 lbs

Weight loss for Week Seventeen: -.5 lbs
Weight loss Total: 27.1 lbs

Weight loss since my heaviest (5/22/10 - 264 lbs): 57.5 lbs

Eh, well, I was definitely hoping for a larger weight loss this week, but I'm pretty sure I can blame that number on my eating this past weekend.  We went out to eat and did some grilling out and I had a lot of chips, lol.  And onion rings Saturday night.  They're my weakness, lol.  I also didn't get my 30 minutes of cardio in yesterday, so I'm planning on getting in 60 minutes today hopefully!

Today my main focus is to get our house back in order and get a grocery list together.  My goal is to not order take out at all this week!  I really want to get back to cooking meals and tonight we're going to have cheeseburgers and sweet potato fries, so it's a start in the right direction!  I really want to see some weight loss this week, so I think I'm going to have to really reign in my eating habits!

Day 119 - Lazy Sunday

Song of the day:  The Lonely Island - Lazy Sunday

Yesterday was really fun.  We just kind of lounged around after the 5k, then Kyle went bowling with my brothers and I took a nap.  After he got back we went to Dublin Square Irish Pub in La Crosse with Miranda and Ryan.  It was such a fun night and the food was really really good!  We ended the night at about 10:30 with discussion about how we were all up past our bedtime, lol.

Today we went to church then to Target and picked up Elliot's birthday invitations!  We then went to Cole and Carrie's for a cookout and it was great to spend the afternoon with friends.  All in all we really had a great weekend with great people.  Kyle wasn't feeling to well, so we had plans to head out early (which means I missed Gigi's party :( :( ), but of course, between naps and packing up the car, we didn't head out until 6:00.  Thankfully the traffic wasn't too bad.  Now I'm doing laundry and waiting for Kyle to get back from dropping off Ethan.  Definitely a successful weekend.  :)
